Tasting Notes
This clear garnet wine is very aromatic, with bright red cherries, violets, and earth. On the palate, this wine shows lively acidity and mild tannins, with flavors of cherry and raspberry, cola, licorice, and spicy black currant emerging in a very long finish.
Winemaker Notes
The grapes were harvested by hand and destemmed into a bin for a 12-day cold soak. When fermentation began, the must was pumped over and punched down twice daily. After fermentation was complete, the must was pressed, and the wine settled overnight. The wine was racked to 25% new French oak barrels and aged for 18 months until bottling. This wine was bottled without fining or filtration.
