2010 Pinot Noir Rebecca's Reserve
A medium garnet-red hued wine, with aromas of Bing cherries, cassis, and a rooty, fruity earthiness. Time reveals hints of horseradish and vanilla. On the palate, plum, cherry cola and chocolate are followed by nutmeg and clove. The tannins indicate this wine has a long life ahead of it—decant if consumed at release; cellar 10 years or more.
The grapes were harvested by hand and destemmed into a bin for a 10-day cold soak. When fermentation began, the must was pumped over and punched down twice daily. After fermentation was complete, the must was pressed, and the wine settled overnight. The wine was racked to 25% new French oak barrels and aged for 18 months until bottling. This wine was bottled without fining or filtration.
