2011 Pinot Noir Cardiac Hill

"From the steepest hillside on the Kramer Vineyards property, grapes from the Cardiac Hill block always make a distinctive Pinot Noir that is a personal favorite of mine.  The wine offers red cherry, violets and pepper with bright acidity and velvety, youthful tannins.  Notes of raspberry, anise and cassis appear on the finish.  It is a perfect match for grilled salmon."

Tasting Notes
This clear garnet wine is very aromatic, with bright red cherries, violets, pepper, and earth. On the palate, this wine shows lively acidity and youthful tannins, with flavors of cherry and raspberry, cola, licorice, and spicy black currant emerging in a very long finish. Pair this wine with salmon, mushrooms, pork loin, or roasted root vegetables.
Winemaker Notes
The grapes were harvested by hand and destemmed into a bin for a 13-day cold soak. When fermentation began, the must was pumped over and punched down twice daily. After fermentation was complete, the must was pressed, and the wine settled overnight. The wine was racked to 25% new French oak barrels and aged for 17 months until bottling. This wine was bottled without fining or filtration.
