2013 Pinot Noir Heritage
Aromatics are spicy cinnamon notes with just a hint of oak reflecting our vineyard site beautifully. On the palate, the spiciness continues with a long finish (another indication of an older vine wine). Tannins are in control and nice and soft.
The grapes were harvested by hand and destemmed 1.5-ton bins. After a 5-day cold soak, fermentation began. The vats were pumped over and punched down twice daily until dry, then pressed. The wine settled overnight, then racked to 25% new French oak barrels for 18 months to age until bottling.
