2015 Celebrate Rose of Pinot Noir
The grapes for this wine are from a 0.6 acre block of Pinot Noir vines planted in 1986, at 870 vines/acre, consisting of the Gamay Beaujolais clone. This site has sedimentary Peavine soil and a southeast facing slope, at roughly 780' elevation.
The grapes were destemmed, and underwent a cold soak for four days. The juice settled overnight, and was racked to a stainless tank to ferment. After fermentation was complete, the wine was racked off the heavy lees and aged in stainless until bottling. To sparkle, the wine was transferred to a high pressure tank, chilled, and force carbonated.
