50/50 oak and stainless for 10 months
2015 Chardonnay Estate
Cellar Door Club Selection, November 2017
Traditional style, with true varietal character and complexity Pineapple, Asian pear, vanilla bean, and white peach, with hints of hay and flintiness on the nose. This leads into green apple, ripe lychee, starfruit, cedar plank, and crème brûlée on the palate, with a fuller body and lively acidity for balance.
The grapes were harvested by hand and whole cluster pressed. The juice settled overnight, then was racked to a stainless steel tank for fermentation. When primary was complete, the wine was racked to 50% French oak barrels and 50% stainless barrels for aging, undergoing partial malolactic, with minimal lees stirring. The wine aged on the lees until bottling the following September.
