Vineyard Notes
Planted in 1995, Cardiac Hill is the steepest hillside of vines in our entire vineyard. Roughly one acre in size, this block has 1200 vines/acre, and is planted with Pommard and Dijon 115 clones. The soil at this site is quite different than in the main blocks of our vineyard—ribbons of clay throughout the block result in increased vine stress. These conditions contribute to lower crop levels and unique flavor profiles in the finished wines.
Winemaker Notes
The grapes were harvested by hand and destemmed, leaving 25% of the whole clusters intact. After a three-day cold soak, fermentation began, and the vats were pumped over and punched down twice daily and pressed at dryness. The wine settled overnight, and was racked to 25% new French oak barrels and aged until the following spring. The wines were racked, blended, and returned to barrel to age for another year, 20 months total.
