Wine Profile
Tasting Notes
Aromas of strawberry, raspberry, cranberry, and cassis, with flavors of dark raspberries and cherries, and a long, peppery finish.
Vineyard Notes
Planted in 1995, Cardiac Hill is the steepest hillside of vines in our entire vineyard. Roughly one acre in size, this block has 1200 vines/acre, and is planted with Pommard and Dijon 115 clones. The soil at this site is quite different than in the main blocks of our vineyard—ribbons of clay throughout the block result in increased vine stress. These conditions contribute to lower crop levels and unique flavor profiles in the finished wines.
Winemaker Notes
The grapes were harvested by hand and 75% destemmed. After a 5-day cold soak, fermentation began. The must was punched down and pumped over twice daily until dry and pressed at dryness. The wine was aged in 20% new French oak barrels and racked the following spring, then returned to barrel to age until bottling in June 2019.
Food Pairing Notes
Pair this wine with salmon, mushrooms, pork loin, or roasted root vegetables.

Had with dinner tonight. It's been sitting in our home for a couple of years. Decided to give it a try tonight. Fantastic. I'm not a professional who can describe notes. But love Pinot and this is one of the best. .
