20% new American oak
A cross of Cabernet Sauvignon, Carignane, and Merlot, this is the ripest Carmine to date—23.9 Brix! Dark garnet in the glass, with aromas of cherries, plums, and a whisper of sweet basil. On the palate, the youthful tannins lift the savory spices, cranberries, cinnamon, and just a hint of capsicum in the midpalate.
The grapes were harvested by hand, sorted, and destemmed. After three days, fermentation began. The vats were pumped over and punched down twice daily and pressed at dryness. The wine settled overnight, and was racked to 20% new American oak to age until it was racked and blended the following spring.
