Tasting Notes
Deep garnet, with aromas of black raspberries, peat moss, and forest floor. Bright and juicy on the palate, with flavors of dark cherries, cola, and a hint of violets.
Vineyard Notes
Planted in 1995, Cardiac Hill is the steepest hillside of vines in our entire vineyard. Roughly one acre in size, this block has 1200 vines/acre, and is planted with Pommard and Dijon 115 clones. The soil at this site is quite different than in the main blocks of our vineyard—ribbons of clay throughout the block result in increased vine stress. These conditions contribute to lower crop levels and unique flavor profiles in the finished wines.
Winemaker Notes
The grapes were harvested by hand, sorted, and 50% destemmed, layering the whole clusters on the bottom of the fermentation vats. After a six-day cold soak, fermentation began. The vats were pumped over and punched down twice daily and pressed at dryness. The wine settled overnight, and was racked to 20% new French oak to age until it was racked and blended the following spring.
