Winemaker Notes
The grapes were harvested by hand and 75% destemmed to 1.5-ton bins. After an 8-day cold soak, fermentation began. The vats were pumped over and punched down twice daily until dry, then pressed. The wine settled overnight, then racked to 25% new French oak barrels for 18 months to age until bottling.
