11 months in stainless
Traditional style, with true varietal character and complexity. Straw color, stone fruit aromas with a hint of petrol. Soft entry, with flavors of apricot, peach, and lime. Fruitness up front, followed by burst of acidity in the midpalate, and a long, dry finish.
The grapes were hand harvested and whole cluster pressed, and the juice settled overnight. Then, the juice was racked to a stainless tank to undergo a cool fermentation. When fermentation was complete, the wine was racked off the lees and aged until bottling the following autumn.
