2015 Pinot Noir Dijon 115
Aromas of cranberries and raspberries, with hints of toasted oak spice. On the palate, this wine is elegant, smooth, and well balanced, with strawberry, red licorice, and a long, peppery finish.
The grapes were harvested by hand and 75% destemmed. The fruit underwent a 5-day cold soak. After fermentation began, the must was pumped over and punched down twice daily until dry and pressed. The wine settled in a tank overnight, and was then racked to 25% new French oak barrels to age for 18 months until bottling.
