2015 Pinot Noir Dijon 777
18 months in neutral French oak
Estate vines planted in 2001; 781 ft. elevation, Willakenzie soils
The grapes were harvested by hand and 75% destemmed. The fruit underwent a 5-day cold soak. After fermentation began, the must was pumped over and punched down twice daily until dry and pressed. The wine settled in a tank overnight, and was then racked to neutral French oak barrels to age for 18 months until bottling.
