Aromas of cardamom, talc, and lemon. On the palate, the small, plentiful bubbles deliver fresh, bright, citrus fruits, Asian pear, almond, wet stone, and subtle orange peel in the long finish.
Elvenglade & Yamhill Vineyards
Chardonnay 60%; Pinot Blanc 40%
The grapes were harvested by hand, sorted, and whole cluster pressed. The juice was settled overnight, and racked to stainless for primary fermentation. After fermentation was complete, the wine was racked off the heavy lees and aged until it was bottled under cap the following summer. The wine aged in tirage bins for 15 months and disgorged November 2019
Blancs de Blancs, or white from whites, refers to the light-skinned grape varieties used in sparkling wines of this style. Typically, that grape variety is Chardonnay. However, there is a small subset of producers using Pinot Blanc, in their sparkling cuvées, which is the inspiration here.
