10 months in 60% older French oak barrels; 40% in stainless barrels
2011 Chardonnay Estate
Clear pale blonde, with full aromatics, including perfumed citrus, and hints of peach, pear, pineapple, and vanilla. Dry and light in the mouth, with bright yet smooth acidity and full flavor. Tropical notes continue on the palate, punctuated by lemon pith and white peach that carries through the long finish.
The grapes were harvested by hand and whole cluster pressed. The juice settled overnight, and was racked to 60% older French oak barrels and 40% stainless barrels for primary fermentation. When fermentation was complete, the wine aged on the lees with bimonthly stirring until spring racking. The wine was racked and blended, the heavier lees were discarded, and then the wine was returned to barrel to continue malolactic fermentation and age until bottling in the fall.
