2016 Celebrate Pinot Noir Blanc
Aromas of wild strawberries, red-skinned apples, and Rainier cherries. On the palate, there's a burst of apple and pear, followed by a whisper of ginger, and a tart, citrusy minerality in the midpalate, and a long finish for a wine of this style. Fine bead with medium-light palate weight.
Planted in 1988, consisting of Wädenswil clones at an elevation of 720' in Peavine/Willakenzie soils and a vine density of 5' x 10'.
The grapes were harvested by hand and whole cluster pressed. The juice settled overnight, then was racked to a stainless tank for primary fermentation. When fermentation was complete, the wine was racked off the heavy lees and aged until bottling the following winter. To sparkle, the wine was transferred to a high pressure tank, chilled, and force carbonated over five days until the desired pressure was achieved, then bottled.
