2016 Celebrate Rosé of Pinot Noir
Aromas of strawberry jam and rose petals. Bright red fruit on the palate, with fresh strawberries, cherry Jolly Rancher, watermelon, with hints of cucumber and lemon zest. Racy acidity, with lingering fruit on the finish.
From vines planted in 1986 at an elevation of 780' in Peavine soil. This block is 100% Gamay Beaujolais Upright clone of Pinot Noir, with a vine density of 5' x 10'.
The grapes were harvested by hand and destemmed for a 4-day cold soak. The fruit was pressed and the juice settled overnight, and racked into stainless for primary fermentation. When fermentation was complete, the wine was racked off the heavy lees and aged until bottling the following winter. To sparkle, the wine was transferred to a high pressure tank, chilled, and force carbonated over five days until the desired pressure was achieved, then bottled.
