Tasting Notes
This is a powerful, rich wine--very fruity and full, with strawberries, black cherry, plum, cranberry, and a sweet earthiness featuring cocoa nibs, mushroom and black tea notes.
Vineyard Notes
The fruit for this wine was sourced from our estate vineyard and Yamhill Vineyards, both located in the Yamhill-Carlton AVA
Winemaker Notes
The grapes were harvested by hand, sorted in the field, and again on the crush pad. A quarter of the whole clusters were layered in the fermenters, and the rest of the fruit was destemmed on top. During the 4-7 day cold soak, the bins were pumped over under the cap once daily. Once fermentation began, the bins were fermented and punched down twice daily until dry. The must was pressed at dryness, and settled overnight. The wine was racked to 1/3 new French oak barrels and aged until bottling during the spring of 2018.
Food Pairing Notes
Brie, roasted chicken, mushrooms, grilled game birds, turkey, duck, or grilled salmon.
