A Study in Time and Texture

Limited Release: Fall 2025 Disgorgement

This wine is the definition of "Prestige." Bottled in August 2018 and resting on the lees for a full 87 months, this cuvée offers a depth of character that cannot be rushed. It is a rare opportunity to experience the profound complexity of extended aging alongside the vibrant acidity of our Yamhill-Carlton estate fruit.

The Profile: The extended autolysis has transformed the mousse into a seamless, creamy texture with a persistent, ultra-fine bead. Expect a sophisticated nose of toasted brioche, lemon curd, and crushed oyster shell. The 40% Pinot Blanc adds a unique, waxy weight that broadens the mid-palate, distinguishing it from standard Blanc de Blancs.

Disgorgement Fall 2025 (80 Cases)
Time on Lees 87 Months
Composition 60% Chardonnay, 40% Pinot Blanc
Dosage 5 g/L
Vineyard Sources Elvenglade & Yamhill Vineyards

Winemaker's Perspective

"I stake my reputation on this wine. It is stunning today, but it has the density and acid structure to evolve under cork for another decade. This is for the collector who understands that time is the most essential ingredient." — Kimberley Kramer

Service Recommendation: Due to the extended aging and complex mousse, we recommend serving this wine in a white wine glass rather than a narrow flute to allow the autolytic character to fully express itself.

Tasting Notes
A seamless, creamy mousse carries sophisticated notes of toasted brioche, lemon curd, and crushed oyster shell. On the palate, the 40% Pinot Blanc adds a waxy, rounded texture that balances the structural acidity of the Chardonnay. The finish is saline and persistent.

Production Notes
60% Chardonnay | 40% Pinot Blanc | 5 g/L Dosage
Winemaker Notes
Hand-harvested and whole-cluster pressed. Fermented in stainless steel to preserve tension. Bottled in August 2018 and aged en tirage for 87 months. Disgorged Fall 2025 with a dosage of 5 g/L to highlight the autolytic complexity without masking the terroir.
Food Pairing Notes
Texture Match: Triple-cream cheeses (e.g., Brillat-Savarin) to echo the creamy mousse while the acid cuts the fat. Saline Contrast: Freshly shucked oysters or scallop crudo to highlight the wine's crushed-shell minerality. High/Low Pairing: Fried chicken or truffle popcorn. The salt and crunch provide the perfect counterpoint to the wine's density and tension.
Production
80 Cases Disgorged
Other Notes
Unlike typical 100% Chardonnay Blanc de Blancs, the inclusion of 40% Pinot Blanc provides a distinctive waxy texture and broader mid-palate weight, while the Chardonnay delivers the linear, mineral backbone.
