It is a rare opportunity to experience the profound complexity of extended aging alongside the vibrant acidity of our Yamhill-Carlton estate fruit.
The Profile: The extended autolysis has transformed the mousse into a seamless, creamy texture with a persistent, ultra-fine bead. Expect a sophisticated nose of toasted brioche, lemon curd, and crushed oyster shell. The 40% Pinot Blanc adds a unique, waxy weight that broadens the mid-palate, distinguishing it from standard Blanc de Blancs.
