The 2017 Brut Prestige Cuvée is a traditional method sparkling wine shaped by patience and precision. This third disgorgement showcases the quiet transformation that occurs beneath the surface—where time, lees, and restraint refine every detail.

Crafted from estate-grown Chardonnay, Pinot Meunier, and Pinot Noir, this wine reflects the clarity and structure of a cool vintage. A mild summer and late ripening preserved natural acidity—essential for extended aging. Bottled in October 2018 and aged 77 months en tirage (on the lees in bottle), this traditional method sparkling wine evolved slowly and naturally, developing a finer mousse, layered aromatics, and seamless texture.

It opens with deep autolytic aromas of toasted brioche, marzipan, and roasted hazelnut, followed by notes of baked apple, candied citrus peel, and dried apricot. The palate is chalky and mineral-driven, lifted by vibrant acidity and finishing long and composed.

This release captures a distinct chapter in the wine’s life—an expression of time, site, and method. Only 80 cases disgorged. Availability is extremely limited. This third small-batch disgorgement offers a focused expression of the wine’s evolution at this stage of tirage aging.

Pair with: Aged cheeses (Comté, Gruyère), roast chicken, seafood in beurre blanc, or mushroom risotto. Best served at 50–55°F in a Riedel Oregon Pinot Noir glass to fully appreciate its evolved aromatic range.

Winemaker Notes
This third disgorgement highlights the evolution of autolysis, with added richness and seamless integration of mousse and fruit. Fermented in stainless steel and bottled in October 2018 for tirage. Aged 77 months en tirage to highlight the evolving complexity of long lees contact. The mousse has become finer and more integrated, while aromatics have deepened. This third disgorgement was finished with a 6 g/L dosage to enhance balance, texture, and aromatic depth without diminishing the wine’s natural energy and freshness.
