Red-skinned fruits and baking spices abound in the bouquet—find notes of fresh cucumber, allspice, Rainier cherry, red apple, watermelon Jolly Rancher, plum, hibiscus, and a hint of basil. Full, rich, and broad on the palate, with a pleasing richness balanced by tart apple, anise, vanilla, ginger, honey, and sweet spices in the very long finish.
The grapes were harvested by hand, sorted, and whole cluster pressed. The free run and first press cuts were settled overnight, then racked to neutral barrels for fermentation. When fermentation was complete, the wine was racked, blended, and returned to barrel to age, discarding the heavy lees. The barrels were stirred bimonthly through the winter and into the early spring, undergoing partial malolactic fermentation. Just prior to bottling, the wine was racked, blended, and filtered.
