2023 Chardonnay Stainless

2023 Chardonnay Stainless

Old-vine, stainless, no ML. Estate Chardonnay from Block 1 on our marine-sedimentary slope, handled reductively—protected from oxygen in stainless and aged on fine lees—to preserve citrus/mineral precision and a chalk-fine finish. (No oak.)

Why 2023? A warm, clean season let Block 1 keep its natural acidity while flavors filled in; this is the crisp, mineral counterpoint to the layered 2022 Aurum Hill Chardonnay (same estate, oxidative barrel ferment).

Wine Profile
Tasting Notes
Lemon, green apple, and white peach with hints of vanilla wafer and almond skin; chalk-tinged texture; dry, mineral finish. (No oak. No ML.)
Vineyard Notes
From Block 1—own-rooted Dijon 76/96 planted in 1984; SE aspect; Peavine/Willakenzie marine sediments. Morning sun and afternoon shade preserve acidity and build fine dry extract—ideal for a no-oak, lees-driven expression.
Winemaker Notes
Hand-picked Oct 4 (23° Brix). Whole-cluster press; juice settled overnight; cool stainless fermentation; aged on fine lees to spring; heavy lees discarded prior to bottling on May 9, 2024. No oak. No malolactic. (Finished: 13.5% alc, pH 3.20, TA 5.9 g/L, RS 1.0 g/L.)
Food Pairing Notes
Dungeness crab; ceviche; chèvre with marionberry; roast chicken with lemon-herb pan jus.

Other Notes
Drink window: now–2029. Expect a linear citrus–mineral focus through 2026–27; from 2028 the acidity will round and the mid-palate will broaden while the finish stays clean.
