Wine Profile
Tasting Notes
Fermented and aged 20 months in neutral French oak | Full malolactic fermentation
A rare and compelling expression of Pinot Noir, this Blanc de Noirs offers a subtle copper hue and layers of aromatic complexity. On the nose, notes of pineapple, pear, apricot, and apple mingle with hints of sweet cream, linen, and a touch of fresh-cut grass. The palate is dry and fruit-forward, with a fuller body and a rich, textured mouthfeel. Flavors of baked apple, peach, and pineapple lead into deeper tones of coconut custard, caramel, and butterscotch. Extended aging in neutral oak and full malolactic fermentation contribute to the wine’s roundness and depth, making this a distinctive white that defies expectations.

Vineyard Notes
Sourced from a block of Wädenswil clone Pinot Noir planted in 1988, this wine reflects the unique micro terroir of our estate vineyard. The grapes come from an east-facing hillside block that receives less late-afternoon sun, creating optimal conditions for white wine production. This microclimate produces ripe, flavorful fruit with naturally high acidity—essential for crafting a refreshing and structured Pinot Noir Blanc. The result is a wine that speaks clearly of site, clone, and winemaking intent.
Production Notes
This wine is made from 100% Pinot Noir (Wädenswil clone), sourced from estate vines planted in 1988. The grapes were whole cluster pressed and fermented in neutral French oak barrels, where the wine remained on lees for 20 months. Full malolactic fermentation was completed during aging. Prior to bottling, the wine was fined with bentonite and sterile filtered.
Winemaker Notes
We’ve been working with this block since the '80s, but the way it expresses itself as a white wine continues to surprise and impress me. This vintage has incredible mid-palate weight and intensity, while still finishing clean and bright. I love the contrast between the tropical fruit notes and the deeper caramel and custard tones from the long barrel aging. It’s a wine that invites second sips and second looks.
Food Pairing Notes
Pair with roasted chicken and grilled peaches, creamy seafood pasta, or a summer grain salad with goat cheese and herbs. Its richness and acidity make it flexible enough for both delicate and savory dishes.
