Dijon 777: The Night Bottle

Dijon 667: The Perfumer (ULTRA-RARE)
The least-planted Dijon clone in Oregon—finicky, lower-yielding, but magically aromatic when it works. 100% whole cluster fermentation in 2017 amplified its lift. Candied cherry, allspice, violet, white pepper. This is the wine that makes you stop mid-sentence and ask, "What is that?" Final 36 bottles—discontinued after 2017.
