Wine Profile
Tasting Notes
This wine is a deep, clear garnet red with intense aromas--cherries, strawberries, plum, and cassis, with oak, vanilla, and a hint of rose petals. In the mouth, the wine starts very softly, then displays a medium body, with lively acidity, and moderate tannins, yet retains its suppleness; flavors are dominated by red fruits, raspberry, cherry, cola, cinnamon and anise. The fruit character is particularly lovely in the mid-palate, and nicely balanced, with a very long finish.
Vineyard Notes
This wine is made from grapes grown in a single block of our vineyard we call Heritage. Planted in 1984, this block is 100% Pommard clone. In 1999, we planted an additional row of Dijon 115 in between alternate rows to increase stress and reduce vigor. Wines from the Heritage block are among the most structured and improve with age.
Winemaker Notes
The grapes were de-stemmed into two 1-ton fermenters. After a 5-7 day cold soak, two strains of commercial yeast were added. The fermenters were punched down twice daily, until dry. The fermenters were pressed after the cap fell, and allowed to settle overnight. The wine was then aged in 25 % new French Oak barrels for 18 months.
Food Pairing Notes
Enjoy with roasted or braised chicken, mushrooms, lamb, or roasted root vegetables. Drink over the next 5-7 years.

Other Notes
2005 was in many ways, a typical vintage. Sugar and acidity were moderate, and the red wines have excellent tannin structure, producing wines with balance and great cellar potential.
