This pale garnet wine is very fruit-forward with spicy notes. Wild strawberry and black cherries dominate the aroma, followed by cloves, mace, and hints of earth and gamey notes. In the mouth, raspberries, cherries, red and black currants are punctuated with hints of chocolate, zingy acidity, and a long finish. Decant if consumed young; cellar up to 10 years.
The grapes were harvested by hand, sorted and destemmed into 1 and 1.5 ton bins. After a 3-day cold soak, fermentation began. When fermentation was complete, the must was pressed and aged in French oak barrels for 20 months. This wine was bottled without fining or filtration.
