18 months in 25% new French Oak barrels
The grapes were harvested by hand, destemmed, and underwent a 5-day cold soak. After fermentation began, the vat was pumped over and punched down twice daily until dry, then pressed. The wine settled overnight, then was racked to 25% new French oak barrels to age until bottling.
