		Wine Profile

		Tasting Notes
Dark garnet color, with berry aromas, including notes of blackberry and raspberry. On the palate, find flavors of black cherry cola and raspberry, which is nicely balanced by good acidity and medium tannins in the midpalate. The berry fruit continues in the long finish.
		Vineyard Notes
			100% Pommard Clone, own rooted
		Winemaker Notes
The grapes were harvested by hand and destemmed 1.5-ton bins. After a 4-day cold soak, fermentation began. The vats were pumped over and punched down twice daily until dry, then pressed. The wine settled overnight, then racked to 25% new French oak barrels for 18 months to age until bottling.
		Food Pairing Notes
This fuller-bodied wine will pair with rich, meaty dishes such as roasted beef, duck, or game, lamb, mushrooms, or pork loin
