Tasting Notes
This is a sparkling wine made with 100% white grapes. Blanc de Blancs usually infers the wine is made from Chardonnay, but this release is a rare blend of Chardonnay and Pinot Blanc. Blanc de Blancs typically have lemon and apple-like fruit flavors, and this wine is no exception. Aged for 36 months prior to disgorging, the extra time has allowed for the development of brioche, almond, and honeycomb, along with tart apple and Asian pear notes.

Winemaker Notes
The grapes were harvested by hand, sorted, and whole cluster pressed. The juice was settled overnight, and racked to stainless for primary fermentation. After fermentation was complete, the wine was racked off the heavy lees and aged until it was bottled under cap the following autumn. The wine aged in tirage bins for 36 months and disgorged in November 2020.
