This is a sparkling wine made with 100% white grapes. Blanc de Blancs usually infers the wine is made from Chardonnay, but this release is a rare blend of Chardonnay and Pinot Blanc. Blanc de Blancs typically have lemon and apple-like fruit flavors, and this wine is no exception. Brilliantly clear pale gold in the glass, with tiny trails of bubbles. Tree fruit aromas are followed by lemon, honey, melon, almond, wet stone, biscuits, and white flowers. On the palate, this wine is fresh and dry, with a well-rounded mouthfeel, good balance, and length. Find flavors of lemon, green apple, Asian pear, honey, with a chalky minerality, and small, delicate, fine bubbles.
Chardonnay 60%, Pinot Blanc 40%
The grapes were harvested by hand, sorted, and whole cluster pressed. The juice was settled overnight and racked to stainless for primary fermentation. After fermentation was complete, the wine was racked off the heavy lees and aged until it was bottled under cap the following autumn. The wine aged in tirage bins for 44 months and disgorged in July 2021; finished with 5 g/L dosage.
