Wine Profile
Tasting Notes
Dark garnet in the glass, with aromas of cherries, bay leaf, pepper, and earth. Powerful flavors with a lean texture bolstered by the youthful tannins and acidity. Black tea, plum, cherries and cranberry mingle on the palate with a long, earthy finish.
Vineyard Notes
Estate vines planted in 1989 and 2001
Winemaker Notes
The grapes were harvested by hand, sorted, and destemmed. After a seven day cold soak, fermentation began. The vat was pumped over and punched down twice daily, and pressed at dryness. The wine was settled overnight, then racked to neutral French oak barrels to age until bottling.
Food Pairing Notes
This wine will cellar for 10-12 years; decant if consumed young. Serve with braised beef, roasted lamb, hard cheese, or Italian cuisine.
