2018 Celebrate Rosé of Pinot Noir
5 months in stainless
Watermelon pink in the glass, with aromas of passion fruit, peach, strawberries, and pink lemonade. Pleasantly spritzy and crisp on the palate, with grapefruit, strawberry lemonade, and watermelon Jolly Rancher in the long finish.
Own-rooted Gamay Beaujolais clone of Pinot Noir planted in 1986 in Peavine soils, at an elevation of 785 feet.
The grapes were harvested by hand, sorted, and destemmed. After a two-day cold soak, the fruit was gently pressed, separating the hard press fraction. The juice settled overnight, and was racked to stainless for a cool fermentation. After fermentation was complete, the wine aged on the fine lees for 4 months until bottling the following spring. To sparkle, the wine was transferred to a high pressure tank, and the pressure was slowly raised over five days until the ideal levels were achieved.
