neutral French oak
Baked apple, pear, lemon and orange zest, peach, honey, ginger, almond
Estate grown Wadenswil clones of Pinot Noir planted in 1988
The grapes were harvested by hand, sorted, and whole cluster pressed. The free run and first press cuts were settled overnight, then racked to neutral barrels for fermentation. When fermentation was complete, the wine was racked, blended, and returned to barrel to age, discarding the heavy lees. The barrels were stirred bimonthly through the winter and into the early spring, undergoing partial malolactic fermentation. Just prior to bottling, the wine was racked, blended, and filtered.
