Fresh and light, with aromas of rising dough and orange blossom. Light toastiness on the palate, followed by tangy apple, gooseberry, and a pleasing texture with fine, plentiful bubbles that contributes to the length.
A blend of base wines from 2012 and 2013. 52% Chardonnay, 47% Pinot Noir, 1% Pinot Meunier.
The grapes were harvested by hand and whole cluster pressed. The juice settled overnight, then racked to a stainless tank for cool fermentation. When the fermentation finished, the wine aged on the fine lees until bottling the following winter. The wine was bottled under cap, and aged in tirage bins until the wines were blended and rebottled in May of 2016. The cuveé was disgorged in September, 2017, and finished without dosage.
