NV Celebrate Rosé of Pinot Noir
This delicate, dry, rosy sparkler has plenty of red berry fruit flavors with a tropical flourish. This wine has all the strawberry, cherry, and raspberry notes we expect, along with ruby red grapefruit and passionfruit.
Own-rooted Gamay Beaujolais clone of Pinot Noir planted in 1986 in Peavine soils, at an elevation of 785 feet
The grapes were harvested by hand, sorted, foot crushed, then pressed. The juice settled overnight, and was racked to stainless and blended with reserve wine from 2019 for a cool fermentation. After fermentation was complete, the wine aged on the fine lees for 4 months until bottling the following spring. To sparkle, the wine was transferred to a high pressure tank, and the pressure was slowly raised over five days until the ideal levels were achieved.
