A refreshing Watermelon, Feta, and Mint Salad is a great recipe for your Pinot Gris or Rosé of Pinot Noir on a hot summer night. This salad combines the sweetness of juicy watermelon, the savory tang of feta cheese, and the freshness of mint leaves for a delightful summer flavor combination.
Ingredients
  • 4 cups Seedless watermelon, cubed
  • 1 cup Feta cheese, cubed or crumbled
  • 1/4 cup Fresh mint leaves, chopped
  • 3 tbsps Very good olive oil
  • 1 tbsp Balsamic vinegar
  • Flake salt and freshly ground pepper, to taste
Directions

1. combine the cubed watermelon, feta cheese, and chopped mint leaves in a large bowl.
2. whisk together the extra virgin olive oil and balsamic in a small bowl to create the dressing; salt and pepper to taste.
3. Drizzle the dressing over the watermelon mixture and gently toss to coat.
4. Season with salt and pepper to taste.
5. Enjoy over baby greens and fresh crusty bread for a light, easy meal. Serve chilled and enjoy with a refreshing Pinot Gris or Rosé of Pinot Noir.
