2019 Celebrate Pinot Gris
Flinty and fresh, with aromas of apple, lemon-lime, and orange blossom. Light and crisp on the palate, with fine bubbles. Find flavors of apple, lemon, and gooseberry, with hints of minerality and spearmint in the finish.
The grapes for this wine are from a 0.9 acre block of Pinot Gris vines planted in 1986, at 870 vines/acre. This site has sedimentary Peavine soil and a southeast facing slope, at roughly 790' elevation.
The grapes were harvested by hand, and whole cluster pressed. The juice settled overnight, and was racked to a stainless tank to ferment. After fermentation was complete, the wine was racked off the heavy lees and aged in stainless until bottling. To sparkle, the wine was transferred to a high pressure tank, chilled, and force carbonated.
